Good Chocolate is made from as few ingredients as possible, we like ours to have only 5 as a maximum :

Sugar | Cocoa is bitter so a touch of sugar is needed to make it a little sweeter |
Milk | But only in White and Milk chocolate |
Emulsifier | Without an emulsifier chocolate might taste grainy |
We don’t allow vegetable fat in our pure chocolate because it’s used to replace the more expensive and naturally flavourful Cocoa Butter: it’s used in the big brand chocolate bars found everywhere in the UK.
We do allow our suppliers to use vegetable fat in certain fillings but never in the chocolate that they use.

Chocolate is such an important food that there are laws to regulate how it’s made, and for luxury, and the tastiest the minimum percentages of cocoa that can be used in Milk and Dark chocolate are relatively low
The minimum for Milk Chocolate is 25% and for Dark Chocolate the minimum percetentage is 35%
Chocolat Chocolat’s Milk chocolate is 34%, almost 40% higher than the legal minimum, and our Dark chocolate is 55% almost 60% higher: that’s why our chocolate tastes so tasty and full flavoured.
Chocolate is a difficult ingredient to cook with, it doesn’t like being too cold, too hot or too humid.
